GF Blueberry-Vanilla Protein Pancakes

 

Ingredients:

  • 1.5 cup Reds Gluten-Free Pancake Mix
  • 2 tbsp Coconut oil (melted)
  • 2 large eggs
  • 1/2 cup Grass Fed Vanilla Protein
  • 1/4 cup Chia seeds
  • 1/4 cup ground flaxseed
  • 1 cup farm fresh blueberries
  • Strawberries & Bananas (optional)

 

Directions:

  1. In large mixing bowl combine pancake mix, coconut oil, eggs, protein powder, chia seeds, and flaxseed. Mix thoroughly.
  2. Pour 1/2 cup mixture onto heated degreased skillet. Cook on low heat. When small bubble appear add fresh blueberries spaced evenly.
  3. Flip pancake. Cook until golden brown.
  4. Makes approx. 1 dozen 3-4 inch pancakes.
